Any home chefs out there who enjoy cooking? I find it relaxing and rewarding and enjoy making things that take quite a bit of time.

I consider myself a decent cook.
Steaks, pork, lamb, braised dishes, etc...
Macaroni based dishes, with meatballs & sausages & fresh tomato sauce, or with vegetables like Broccoli Rabe or Swiss Chard (had that last night).

Can't bake worth a damn though. TBH I'd be afraid to try.

if you have cooked all these dishes yourself then I must say you have a talent sir I used to cook for a Casino and it was extremely demanding of me and the other staff especially when the Casino hosted events keep up the good work Kar :)

Awww, thank you! I will say, I hate cooking for other people. Takes all the joy out of it with all the stupid opinions like "I hate onions" and the other person saying, "there aren't enough onions". I can only imagine how frustrating it must be to work professionally as a chef. Much, much more pleasure in cooking for myself and maybe a special person.

I actually prefer to cook for others. I like complicated things. Each year, I let my kids decide what kind of cake they want. I swear they say off the wall things to see if I can do it. Last year, but easy because I was busy as hell so they were nice, but the year before, the one wanted a S'mores cake and the other want a cookie dough cake. That S'mores cake came out incredible.

I always tend to ask if anyone likes or dislikes something because I want them to enjoy themselves and not have to worry about it.

My mom felt there wasn't enough of a presentation so had food delivered from a cheap local restaurant and mixed it with mine. Everyone then complained and didn't want any left overs, I then had to take a bucket of very mediocre food because I hate to waste it. It really upset me that she decided to dilute the quality and all my effort for no good reason. I f_ing hate cooking for people.

I think my mom gets annoyed that people like my food better than hers, but she's so bland. There's like no flavor. Her pasta sauce literally tastes like tomatoes. She doesn't have any concept of salt or pepper and just forget about adding onion and garlic. lol
So yeah, I kind of get what you mean. As far as family goes, I only make desserts and/or side dishes to contribute. Most of my food leftovers go home with either my brother and his wife or my niece.
As for my mom. I don't really make non desserts for her, unless I feel like making gluten free/soy free/vegan breads. And of course, I'll make cakes or cookies that she can have.
 
Your pizza looks amazing as does the pan lasagna. I enjoy having home cooked meals. Like you, hate cooking for the family now as dealing with vegetarian, no dairy, no soy, no onions, no green pepper etc... How does one cook with out onion!
 
Darn, that makes me hungry lol.
I love cooking...but not for myself. If I cook for myself, it's usually an avalanche of oven ready, frozen dishes and I suck at ideas. When I got someone to feed me ideas though, I love to cook, especially if I don't exactly know what I'm doing lol. Leaves room for improvising.
Besides, if I screw up...can always order pizza 😉
 
I need to make a dessert for Easter. Any suggestions? I usually just make a carrot cake, but I'm thinking I might deviate from that.

Why don't you give macarons a try? Delicate and tasty desert with a fresh, spring like quality if you put a fruit filling.

I haven't even attempted to make those vegan and I don't have time this week to try it. Any easier suggestions? lol

I was considering trying something new. Like some kind of stuffed cupcake. I was considering making a variation of my Smore's cupcake with a ganache center or perhaps even a truffle.

That strawberry cream pastry in the top set of pictures is easy and tasty. If you want vegan, you'll have to replace butter and cream cheese with equivalent.
