A beard helps. If movies are anything to go by, blowing up anything from a building up to an island, cracking one-liners at people you kill, discarding guns in favour of good ol' fisticuffs when you meet your nemesis, and having casual, unprotected sex with every gorgeous woman you come across are staples of a true man. Oh, and saving the world, avenging your loved ones and possibly causing as much collateral damage as possible in the midst of doing all this. Let's not forget that. :p

Still, straight answer...the usual biological naughty bits aside, I think it's the ability to take responsibility for one's actions, owning up to your mistakes, holding unto your word, and a good point already made, having other high principles (loyalty and honesty, first and foremost) and sticking by them.

Sounds a bit like idealistic gibberish, in retrospect.
